Mead Making at Home
Mead is the oldest fermented beverage known to humanity — honey and water fermented into a drink that has been enjoyed for thousands of years. Modern mead making has evolved from a simple farmhouse process into a craft with its own techniques, styles, and competitions. This guide covers everything from honey selection to bottling your first batch.
Honey: The Soul of Mead
Honey is the defining ingredient. Unlike beer malt, which is relatively standardized, honey varies enormously by floral source, season, and region. Each variety imparts distinct character to the mead.
Clover honey is the most common and affordable. It produces a light, mild mead with subtle floral notes. Orange blossom honey has citrus character and is prized for traditional mead. Wildflower honey changes with the season and region, offering complexity that many mead makers prefer. Buckwheat honey is dark, molasses-like, and overpowering — use it in small amounts or for bochet-style meads where honey is caramelized by boiling.
Honey consists primarily of fructose and glucose. Unlike barley malt, honey contains no enzymes or complex carbohydrates. It ferments completely, leaving very little body unless balanced with unfermentable sugars, oak, or other additives. The sugar content is high — roughly 35 gravity points per pound per gallon (PPG). For traditional mead, the honey-to-water ratio determines the OG and potential ABV.
Honey can crystallize over time. Crystallized honey is fine for mead making — warm it gently to liquefy before use. Never microwave honey; it degrades the delicate aromatics. Low heat (below 120°F / 49°C) preserves volatile compounds.
Essential Equipment
Mead making requires less specialized equipment than beer brewing. You need a fermenter (glass or plastic), airlock, hydrometer, long spoon, and bottles. A 5-gallon batch typically uses 12–15 pounds of honey. A 6.5-gallon fermenter leaves headspace for vigorous fermentation.
Unlike beer, mead does not require a boil. Heat the water to dissolve honey, but boiling is unnecessary and drives off delicate honey aromatics. Some mead makers pasteurize at 160°F for 10 minutes to kill wild yeast and bacteria. Others use sulfite (Campden tablets) at 1 tablet per gallon, waiting 24 hours before pitching yeast.
A mead-making stirrer or whisk helps aerate the must (the honey-water mixture before fermentation). Yeast nutrient is essential for mead — honey lacks the nutrients that grape juice or malted barley provide. Without nutrient, fermentation is slow, stressful, and prone to off-flavors.
Yeast and Nutrients
Yeast selection for mead mirrors cider. Wine yeasts are the most popular. Lalvin D-47 produces a clean, fruity mead but is temperature-sensitive (under 70°F). Lalvin 71B-1122 metabolizes some organic acids, reducing sharpness and producing a rounder mead. Lalvin K1-V1116 is a vigorous fermenter that works across a wide temperature range.
For a traditional mead, ale yeast (SafAle US-05 or Nottingham) produces a mead that is less wine-like and more approachable early. This is a good choice for first-time mead makers. The mead will be ready to drink in 3–6 months rather than 12+ months.
Staggered nutrient addition (SNA) is the standard technique for healthy mead fermentation. Split the total nutrient dose into 3–4 additions over the first 3–5 days of fermentation. This provides yeast with nutrients when they need them most without overwhelming them early. Use Fermaid K or a blend of DAP and yeast hulls. GoFerm is a rehydration nutrient used when rehydrating dry yeast.
Without proper nutrient, mead fermentation can stall at 1.040–1.020, leaving a cloyingly sweet, unbalanced mead. With proper SNA, the same must ferments to 1.000 or below, producing a balanced dry mead.
The Basic Process
For a 5-gallon batch of traditional mead: heat 2 gallons of water to 100°F. Add 12 pounds of honey, stirring until fully dissolved. Transfer to fermenter and top up with cool water to 5 gallons. Target OG: 1.100–1.110 (about 13–14% potential ABV). Aerate vigorously by shaking or with an aerator wand.
Rehydrate yeast with GoFerm. Pitch yeast. Ferment at 60–68°F for 4–8 weeks. Add nutrient at 0, 24, 48, and 72 hours (or 1/3 sugar break). After fermentation, rack off sediment into a clean vessel.
Age for 3–12 months. Traditional mead benefits from bulk aging (in a carboy or keg) before bottling. After aging, bottle or keg. For still mead, simply package. For sparkling mead, add priming sugar and bottle condition.
Mead Styles
Traditional Mead uses only honey, water, and yeast. The honey variety defines the character. A traditional mead can be dry, semi-sweet, or sweet depending on the honey-to-water ratio and yeast attenuation. A well-made traditional mead has honey aroma, a clean fermentation profile, and balanced sweetness.
Melomel is mead with fruit added. Fruit can be added during primary fermentation (for a more integrated character) or after fermentation (for a fresher fruit character). Use 2–5 pounds of fruit per gallon depending on intensity. Popular fruits include berries, cherries, stone fruits, and citrus. Melomels are among the most popular mead styles for home consumption.
Metheglin is spiced mead. Add spices after fermentation to avoid losing volatile aromas during fermentation. Cinnamon, clove, nutmeg, ginger, vanilla, and star anise are common. Use a small amount — spice character should complement, not dominate. Make a tincture by steeping spices in vodka for a week, then add to taste at packaging.
Bochet is mead made from caramelized honey. Boil the honey for 30–120 minutes until it darkens to amber, copper, or almost black. The caramelization adds toffee, marshmallow, and burnt sugar flavors. Boiling also breaks down some sugars into unfermentable compounds, so bochet meads finish with more body and residual sweetness. The process is smelly and requires careful attention — honey can boil over and cause serious burns.
Session Mead is a lower-alcohol mead (5–8 percent ABV) designed for easy drinking. Use 6–8 pounds of honey for 5 gallons. Focus on a clean, fast ferment and early consumption. These meads are ready in 4–6 weeks and are a great introduction to mead making.
Aging Mead
Mead improves dramatically with age. A 3-month-old mead can be harsh and one-dimensional. At 6 months, it smooths. At 12 months, it becomes integrated and elegant. At 2–3 years, traditional meads and melomels can be exceptional. The aging timeline depends on the honey variety, yeast selection, nutrient regimen, and fermentation temperature.
Bulk aging (in a carboy or keg) is preferred over bottle aging because any sediment can be racked off before packaging. After bulk aging, bottle and the mead is ready. For long-term storage, use oxygen-absorbing caps and store in a cool, dark place.
If your mead is harsh or has a solventy alcohol character (from high fermentation temperature), give it time. These characters mellow with 6–12 months of aging. If the mead smells like sulfur (common in mead), it will usually blow off with 2–4 weeks of aging after racking.
FAQ
How long does mead take to make? A session mead is drinkable in 4–6 weeks. A traditional mead is best at 6–12 months. A high-alcohol melomel or bochet improves for 1–3 years. Patience is the most important ingredient.

How sweet should mead be? It depends on style and personal preference. Traditional mead ranges from bone-dry (FG 0.995–1.000) to sweet (FG 1.020–1.035). Most commercial meads are semi-sweet (FG 1.010–1.015). The OG and yeast attenuation determine sweetness.
What is the difference between sack mead and standard mead? Sack mead is a strong mead with higher honey content and higher ABV (14–18 percent). It requires a highly alcohol-tolerant yeast, proper nutrient, and extended aging. The name comes from the sack-shaped bottles used in Shakespeare’s England.
Can I make mead without yeast nutrient? You can, but the fermentation will be slow, prone to stalling, and likely produce off-flavors. Honey is nutritionally poor for yeast. Nutrient is strongly recommended for consistent, quality results.
How do I clear cloudy mead? Time is the best clarifier. Cold crash (36–40°F) for 2–4 weeks after fermentation. Bentonite (added at pitching) or sparkolloid (after fermentation) are effective fining agents. Pectic enzyme helps fruit meads. Most meads clear naturally over 3–6 months.
What is the ideal fermentation temperature for mead? 60–68°F for most strains. Below 60°F, fermentation is very slow. Above 75°F, off-flavors increase dramatically. D-47 is especially temperature-sensitive — keep it under 70°F to avoid harshness.
Can I carbonate mead? Yes. Carbonated mead is less common than still mead but growing in popularity, especially for session meads. Use the same priming sugar calculations as beer. Target 2.5–3.0 volumes of CO₂.
