Understanding Hops: Varieties and Usage
Hops define the character of modern beer in ways that go far beyond bitterness. The right hop choices and timing can produce anything from a subtle earthy background note to an explosive burst of tropical fruit. Hop Anatomy and Chemistry
The hop cone (or strobile) contains lupulin glands — tiny yellow pellets that hold the valuable compounds. Alpha acids (humulone, cohumulone, adhumulone) are the primary bittering agents. Dry Hopping

Common classic combinations include Cascade and Centennial, Citra and Mosaic, Simcoe and Amarillo, and Galaxy and Nelson Sauvin.
The hop schedule determines the balance. A standard IPA might have: 1 oz Magnum at 60 min (bittering), 1 oz Cascade at 15 min (flavor), 1 oz Cascade at flameout (aroma), 2 oz Cascade dry hop (intense aroma). The bitterness to malt balance should be calculated so the beer is hoppy but not harsh.
