Extract Brewing: Getting Started
Extract brewing is how most homebrewers learn the craft. By using concentrated malt syrup or powder, you bypass the mashing step entirely and focus on the core skills: boiling, hopping, cooling, fermenting, and packaging. This guide covers everything you need to brew exceptional beer with extract, including techniques that narrow the gap between extract and all-grain quality.
Understanding Malt Extract
Malt extract is produced by commercial maltsters who mash grain and then evaporate the water to create a shelf-stable syrup or powder. Liquid malt extract (LME) contains approximately 80 percent fermentable and unfermentable sugars and 20 percent water. Dry malt extract (DME) is spray-dried and contains less than 2 percent moisture.
The main advantage of extract is convenience — you skip a three-hour mash and lauter process. The main disadvantage is that extract has already been caramelized during production, which adds color and flavor that may not be appropriate for delicate styles. This is simple: place crushed grains in a muslin bag, heat about 1.5 gallons of water to 155–165°F (68–74°C), and steep the bag for 20–30 minutes. Do not exceed 170°F (77°C) to avoid extracting harsh tannins.
After steeping, lift the bag and let it drain. Do not squeeze the bag — squeezing releases tannins that create astringency. Rinse the bag with a little warm water if desired. Proceed by adding extract and bringing to a boil.
Steeping grains allow extract brewers to brew dark styles like stouts and porters, amber ales, brown ales, and many Belgian styles. A few ounces of crystal malt transforms a basic pale extract beer into something with genuine complexity. For example, steeping 8 ounces of caramel 60L and 4 ounces of roasted barley in a pale extract base produces a convincing dry Irish stout.
The Full Volume Boil
One of the easiest ways to improve extract beer quality is to boil a larger volume. Many extract recipes call for a concentrated boil of 2.5 gallons topped up with cold water in the fermenter. This works but produces darker, more caramelized beer than intended because the concentrated wort caramelizes more during the boil.
Instead, boil a full 5.5 to 6 gallons. This requires a kettle of at least 7.5 gallons. The larger volume dilutes the sugars, reducing caramelization and producing a color closer to what the recipe intended. Full-volume boiling also improves hop utilization because the lower gravity wort extracts bitterness more efficiently.
Late extract addition is another technique borrowed from advanced brewers. Add only 10–20 percent of the extract at the start of the boil for bittering, then add the remaining 80–90 percent in the last 10–15 minutes. This minimizes the time the extract spends at high temperature, reducing color pickup and producing a brighter, cleaner beer. Hop Schedules for Extract Brewing
Hop additions work the same in extract brewing as in all-grain. Bittering hops added at the start of the 60-minute boil provide the backbone of bitterness. Flavor hops at 15–10 minutes contribute mid-palate character. Aroma hops at flameout or in the whirlpool add fragrance without bitterness. Dry hopping in the fermenter adds intense hop aroma.

Cooling and Pitching
After the boil, cool the wort as quickly as possible. An immersion chiller is ideal — run cold water through the coil while stirring the wort. In a full-volume boil, an immersion chiller takes 15–20 minutes to reach pitching temperature. For partial boils, an ice bath in the sink works.
Once cooled, transfer to the fermenter. If doing a partial boil, top up with cold filtered water to reach 5 gallons. Stir vigorously to aerate — yeast needs oxygen to build cell walls during the lag phase. Some brewers use an aquarium pump with a sterile filter to aerate, but shaking the sealed fermenter for a few minutes is sufficient for most ales.
Pitch yeast immediately after aeration. For 5 gallons of ale wort up to 1.060 OG, one packet of dry yeast is sufficient. Rehydrate dry yeast in warm water (about 95°F / 35°C) for 15 minutes before pitching for best viability, though direct pitching works too. FAQ
Is extract beer as good as all-grain? With modern techniques like late extract addition, full-volume boils, and steeping grains, extract beer can be indistinguishable from all-grain versions. The main limitation is the difficulty of brewing very light styles like Pilsner because of the inherent color of extract.
