Hard Cider and Perry Making
Hard cider is one of the simplest and most rewarding fermented beverages to make at home. With quality juice, proper yeast, and patience, you can produce cider that rivals anything available commercially. This guide covers the full process from juice selection through fermentation, aging, and carbonation.
Juice Selection
The quality of the finished cider depends overwhelmingly on the quality of the juice. You can use fresh-pressed cider from a local orchard, store-bought pasteurized juice, or even frozen concentrate, but the results vary dramatically. Fresh-pressed juice from cider apples (not eating apples) produces the most complex and satisfying cider. Cider apples contain higher levels of tannins and acids that provide structure and mouthfeel.
If you cannot source cider apples, use fresh-pressed juice from a mix of sweet, tart, and aromatic eating apples. A blend of varieties works better than a single type — Granny Smith provides acid, Honeycrisp provides sugar and aroma, and Gala or Fuji adds sweetness. Avoid juice with preservatives like potassium sorbate or sodium benzoate, which inhibit fermentation. Ascorbic acid (vitamin C) is fine.
Pasteurized juice from the grocery store works but produces a simpler, less complex cider. The pasteurization process kills wild yeasts and enzymes that contribute character. Many commercial ciders use dessert apple juice and rely on yeast selection and adjuncts for complexity.
Perry uses pear juice instead of apple juice. Pears are more challenging because they contain sorbitol, a sugar that yeast cannot ferment, and pear juice is often lower in acid and tannin. Blend pear juice with apple juice or add tannin and acid adjustments for better structure.
Yeast Choices for Cider
Cider yeast selection dramatically affects the final character. Wine yeast is the most common choice for home cider makers. Lalvin EC-1118 (Champagne yeast) is a vigorous fermenter that produces a very dry, crisp cider with high alcohol tolerance. It strips some apple character. Lalvin D-47 (white wine yeast) retains more fruit character and ferments cleanly. Nottingham ale yeast produces a fruity, English-style cider with moderate attenuation.
Belgian yeast strains produce spicy, phenolic ciders that are divisive. Cider-specific yeasts from Mangrove Jack (M02 Cider) and White Labs (WLP775 English Cider) preserve apple character and ferment cleanly. For beginners, Nottingham or SafAle S-04 produce excellent, approachable cider.
Do not use bread yeast in cider. The flavors are harsh and the fermentation is unpredictable. Ale yeast is the best choice for beginners because it is forgiving and produces pleasant character.
Fermentation Process
Cider fermentation is simpler than beer fermentation. There is no mash, no boil, and no hop schedule. The basic process: sanitize equipment, pour juice into a sanitized fermenter, pitch yeast, attach airlock, and wait.
Before pitching, take a hydrometer reading. Cider OG typically ranges from 1.045–1.060 depending on the juice. Add yeast nutrient — cider often lacks the nutrients that beer wort provides. Diammonium phosphate (DAP) at 1 teaspoon per 5 gallons helps yeast ferment cleanly. Fermaid K or a blend of DAP and yeast hulls works even better.
Ferment at 60–68°F (15–20°C). Cooler temperatures preserve fruit character. Warmer temperatures speed fermentation but can produce harsher alcohols and blow off delicate aromas. Fermentation takes 1–3 weeks. The cider will clear from the top down as yeast settles.
After fermentation stops (stable gravity over 3 days), it is time to decide on sweetness, carbonation, and aging. Cider fermented to dryness will have a final gravity around 1.000–1.005 (0–1.25% residual sugar). Most commercial ciders are backsweetened to some degree.
Backsweetening
Backsweetening is the trickiest part of cider making. If you add sugar to a finished cider and bottle it, the yeast will ferment the new sugar, creating carbonation (possibly excessive) and potentially bottle bombs or gushers. You must either stabilize the cider before backsweetening or use unfermentable sugars.
The most common approach is stabilization with potassium sorbate and potassium metabisulfite (Campden tablets). After fermentation, rack the cider off the yeast. Add 1 Campden tablet per gallon (crushed and dissolved) and 1/2 teaspoon potassium sorbate per gallon. Wait 24–48 hours for the chemicals to work, then add your sweetener. The sulfite inhibits yeast reproduction; the sorbate prevents any surviving yeast from reproducing. This combination stops fermentation.
Note: people with sulfite sensitivity should avoid sulfite-stabilized cider. Natural methods (unfermentable sweeteners or sterile filtration) are alternatives.
Unfermentable sweeteners include erythritol, xylitol (toxic to dogs — use with caution), stevia, and monk fruit. These provide sweetness without feeding yeast. Erythritol is the most popular because it tastes most like sugar. Use about 1–1.5 cups per 5 gallons for a semi-sweet cider, adjusting to taste.
Carbonation
Carbonated cider is more popular than still. The two approaches are bottle conditioning (adding priming sugar before bottling) and force carbonation in a keg.
For bottle conditioning, calculate priming sugar the same way as beer. Target 2.5–3.0 volumes of CO₂ for cider. Use an online calculator. The caveat: if you backsweetened with fermentable sugar and stabilized, the yeast is no longer viable and cannot carbonate. You must either add fresh yeast at bottling (a small pinch of dry wine yeast per bottle) or use a method where you backsweeten with unfermentable sugar and carbonate with priming sugar.
Kegging cider solves all carbonation and backsweetening problems. Ferment dry, keg, cold crash, and force carbonate at 12–15 psi for 2–3 days. Backsweeten to taste with juice concentrate or sugar syrup. The cold temperature and lack of yeast activity (after cold crashing for 48 hours) prevent refermentation. Keep the keg cold (35–40°F) to maintain stability.
Aging and Flavor Development
Cider benefits from aging. A fresh cider is often harsh and one-dimensional. After 2–3 months, the cider smooths, sulfur blows off, and apple character becomes more pronounced. After 6–12 months, complex notes develop — honey, spice, and baked apple. Traditional French ciders are aged for 1–2 years before release.
During aging, keep the cider in a sealed vessel (carboy or keg) with minimal headspace. Oxygen exposure at this stage produces acetic acid (vinegar) character. If aging in glass, use a carboy with a stopper and airlock. Top up with similar cider or with sanitized glass marbles to reduce headspace.
Flavor adjuncts expand the cider repertoire. Add 1–5 pounds per gallon of fruit (cherry, raspberry, blackberry) for fruit ciders. Add spices (cinnamon stick, vanilla bean, clove) after fermentation for mulled character. Add bourbon or rum-soaked oak chips for barrel character. Hops in cider is polarizing but can work with citrusy varieties in low doses.
Cider Styles
New World Cider is the standard commercial style — clean, crisp, and bright. Use dessert apple juice with wine or ale yeast. Serve carbonated and cold. ABV 5–7 percent.
English Cider is traditionally made from bittersweet cider apples with high tannin. It is fuller-bodied, deeper in color, and often still or low-carbonation. These are more challenging to make at home without cider apple juice.
French Cider (Cidre) is made from specific French apple varieties and is naturally carbonated via the méthode champenoise. It is often sweeter (doux) and lower alcohol (3–5 percent). The process requires keeving — removing yeast nutrients before fermentation to create a natural sweetness.
Perry is less common but can be exceptional when made with proper perry pears (not Bartlett). It has a unique, silky mouthfeel from sorbitol and a delicate floral character. It is notoriously difficult to make clear because pear pectin is stubborn.
FAQ
Do I need to pasteurize fresh-pressed cider? Not if you pitch a healthy dose of wine or ale yeast. The pitched yeast will outcompete wild microbes. If you are concerned or the juice comes from a questionable source, add 1 Campden tablet per gallon and wait 24 hours before pitching yeast.
Why is my cider vinegar? Acetic acid bacteria convert ethanol to acetic acid in the presence of oxygen. The cause is too much headspace during aging or aeration after fermentation. Always minimize headspace and use an airlock.
How do I make sweet cider without bottle bombs? Use one of these methods: stabilize with sulfite/sorbate then backsweeten, use unfermentable sweeteners, keg and keep cold, or pasteurize bottles after carbonation. The last method requires careful monitoring to avoid exploding bottles.
What is the alcohol content of hard cider? Most ciders range from 5–8 percent ABV. The OG of apple juice is about 1.050. Dry fermentation yields about 6.5 percent ABV. Adding sugar (brown sugar, honey, or juice concentrate) increases ABV.
Can I make cider from store-bought juice? Yes. Look for juice without preservatives. Preservative-free juices are common in the refrigerated section. Pasteurized juice works. Do not use juice with potassium sorbate or sodium benzoate.
How long does cider take to make? 4–6 weeks from juice to glass for a basic carbonated cider. 2–3 months for improved flavor. 6–12 months for a complex, aged cider.
Should I add pectic enzyme to cider? Yes. Pectic enzyme breaks down pectin, which causes haze. Add 1 teaspoon per 5 gallons at the start of fermentation for clearer cider. It is especially important for fruit ciders and perry.
Can I use beer equipment for cider? Yes, with one caution: apple juice aromas can linger in plastic. Dedicated equipment is not as critical as with sour beer, but cleaning immediately after use is important.
How do I make sparkling cider? The same way you carbonate beer — bottle condition with priming sugar or force carbonate in a keg. Sparkling cider should have 2.5–3.5 volumes of CO₂ for a lively, Champagne-like mouthfeel.
What is keeving? Keeving is a traditional French technique where the cider is allowed to clarify naturally before fermentation completes. This removes yeast nutrients and causes fermentation to stop early, leaving natural residual sweetness. It is difficult to execute at home but produces exceptional cider.
